What is something special that I can do to honor someone at Disney World?

We are traveling there to celebrate my mother being cancer-free - staying at the Polynesian, and would like to do something special on her "anniversary". Looked into the legacy photos at Epcot, but they are no longer selling them. Does anyone know of something along that line?
